Oh how I love my late night grilled cheese. What do I love with my grilled cheese? Bacon! What do I love more than grilled cheese and bacon? Scallops! So why not put them all together in a delicious savory mouthful? We got these super fresh u10 scallops at Taro's on Sheppard. Ingredients: - 1 tablespoon all-purpose flour
- salt to taste
- 1/2 teaspoon dried marjoram
- 4 large sea scallops
- 2 teaspoons olive oil
- 1/4 cup dry white wine
- 1/2 tablespoon balsamic vinegar
- 2 slices of white or whole wheat bread
- 3 slices of chopped up bacon
- 1/2 cup of grated cheddar
Directions:
Combine first 3 ingredients in a large zip-top plastic bag; add scallops. Seal bag, and shake to coat. Heat oil in a large nonstick skillet over medium-high heat. Add scallops; cook 3 minutes on each side or until done. Remove from pan; keep warm. Add wine and vinegar to pan; cook 3 minutes or until slightly thick, stirring with a whisk. Stir in scallops; remove from heat. Grill bacon and chop into pieces then add to the cheese between the slices of bread.
Heat 1 tablespoon of the butter in a skillet or grill and when melted add the sandwich. Gently press down with a spatula once or twice during the grilling.
When one side is golden, add the remaining tablespoon of butter, turn the sandwich over, and brown. Cut the grilled cheese in 4 pieces.
Assemble and enjoy!
